Butternut Squash Soup & Irish Soda Bread


This delicious 2 part recipe was sent in by Elizabeth Dunne, of Co. Kilkenny, as part of the recent Irish recipe competition, and received the runner-up prize. Everything about this recipe just screams “delicious home-made Irish cooking” at me! I just love Elizabeth’s version of Irish Soda Bread, and I can’t wait to try the butternut squash soup. Butternut Squash Soup (Serves 4)


1 x Butternet squash

1 x Onion

1 x Stick of Celery

1 x Red Pepper

1 x Carrot

2 x Vegetable Stock Cube

½ tsp Chili Flakes

Pinch of Chili Powder

Pinch of Oregano

Pinch of Black Pepper


1. Chop all veg and place into a pot

2.Add all herbs and spices along with the vegetable stock

3. Add a pint and a quarter of water

4. Bring to the boil

5. Simmer for 20-25 minutes

6. Blend and adjust seasoning


Brown Soda Bread


12 oz Wholemeal Flour

4 oz White Flour

1 tsp Bread Soda

1 tsp Salt

1 tsp Treacle

500g Natural Yoghurt (0.1% less fat)

1 tsp Oatlets



1. Preheat the oven to 200 degrees Celsius (approx 390F)

2. Sieve the white flour with the bread soda and salt  in a mixing bowl

3. Add the wholemeal flour

4. Add the treacle to the natural yoghurt and mix well. Top up with milk for a wet mix.

5. Combine the two mixes together and then place in a greased 1lb loaf tin

6. Make a deep cut along the top with a knife

7. Smooth out and add a sprinkling of porridge oatlets

8. Bake in the oven for 50 minutes

9. Remove from tin and turn the bread upside down. Return to oven for 10 minutes to ensure the underside is cooked.
